Chicken Chili

Chili can be a very touchy subject. It's a signature dish for many cooks and it's one of those dishes that cooks compete with - professionally and non.

There are many styles and variations within each style. This recipe is similar to a Texas style chili in seasoning, but leans toward a Midwestern style in that it includes bell peppers and beans. Unlike a typical shredded beef chili that would cook to tenderize the beef and build the flavor for at least a couple of hours, a large part of building the flavor of this chili is done before the chicken is added to the base.

The ground chili powder, cumin, cayenne are all usual Texas chili seasonings. I added the chipotle in adobo sauce for it's additional heat and smokiness.
