Porchetta Chops on Christmas Day

I was lucky enough to grow up with a father that considered porchetta to be a very special part of most holidays. There is absolutely nothing like the smell of a porchetta roasting in the oven.

To me, that is Christmas! The butcher from the Piggly Wiggly in Chisholm (northern Minnesota), Carmen Berarducci, always seasoned and rolled the pork shoulder for us. I'm using a version of that traditional seasoning today (for our Christmas dinner) on pork chops and combining it with a potato and chestnut dressing. By the way, in Italy they frequently use this seasoning to roast an entire suckling pig! Now that's PORCHETTA!
