I love the combination of sweet and savory. I also love spinach. No wonder I love this recipe!
I bought the most beautiful spinach from one of my favorite vendors at the Minneapolis Farmer's Market, Shur Yang.

One thing I've heard Shur say many times is "don't cook or squeeze all of the water out of spinach". With this type of recipe, he's totally right. Cooked properly, the spinach is tender, somewhat plump, and delicious. You can find Shur, and his gorgeous greens, at stalls 245, 247,and 249 at the Minneapolis Farmer's Market. He picks during the night so his greens are as fresh as they possibly can be.

Try this recipe as a side with chicken.
