Squash Soup

I served this at a recent event for MN Monthly "Best of the Twin Cities". The response was so great that I not only shot it as a video, but decided to include it in my Holiday cooking class menu.

I use a lot of squash - and honestly the key is great stock and saute'ing the seeds and guts of the squash. It produces a rich, deep, round flavor to the soup that is exceptional.
