What do you do when you cook a lot and don’t have a garden? Obviously, hit the farmer’s markets and co-ops. But if you’re really lucky, you know someone with a garden who will allow an occasional garden raid.

I never met a beet I didn't like, but a lot of people have. I suspect it's because someone slipped them one of the canned pickled beauties our mothers loved in the 60's. Another one of those questionable food items that kept returning to the table even though no one ever actually ate them - like the gray peas.
Why roast a whole chicken? Well for one thing, it's much less expensive than buying the pieces separately.
One of the things I love about Italian cooking is that simplicity reigns. With this dish, using just a few ingredients, you can quickly create an elegant meal that you'd only expect from your favorite Italian restaurant. The key is to not overcook the veal.
It is so rewarding to cook food that tastes great is and good for you as well. That doesn't mean never using butter or never having any fun.
