In honor of it finally being "too hot", Mark and I made our way to St. Paul to check out La Chiquita on the recommendation of an article in the Star Tribune.
I grew up with tacos made with ground beef and a seasoning packet. I actually thought they were great, but my first trip to Mexico changed my mind.
Winters are long and very gray in Minnesota. I like to use a little color and heat to spice things up a little bit. Since there is no trip to Mexico on the books, I thought I'd cook up my favorite Mexican treat - fish tacos.
