I was lucky enough to grow up with a father that considered porchetta to be a very special part of most holidays. There is absolutely nothing like the smell of a porchetta roasting in the oven.
Porchetta, where I came from, was usually made from a pork shoulder and rolled into a roast with a seasoning rub (although we didn't call it that) that always had fennel in it.
