Every cook needs several signature soups in their library. For fall and winter, this is one of my favorites.
Don't ask me why, but when I am feeling under the weather I crave Thai soup rather than traditional chicken soup.
I've had and made many versions of this famous dish from the Burgundy region of France. Typically, the mushrooms and pearl onions are saute'd in butter separately and served on top of the stew.
I served this at a recent event for MN Monthly "Best of the Twin Cities". The response was so great that I not only shot it as a video, but decided to include it in my Holiday cooking class menu.
There is nothing like a picnic on a beautiful summer day. But why stick to the typical fried chicken and potato salad? This is a cool (as in chilled), healthful, and flavorful alternative.
