Making ravioli is one of my favorite things to include in my cooking classes. It was a very "special occasion" dish when I was growing up.
I served this at a recent event for MN Monthly "Best of the Twin Cities". The response was so great that I not only shot it as a video, but decided to include it in my Holiday cooking class menu.
There is very little cream here, but the soup tastes as if it was loaded with it! Fabulous soup!
